Pistachio facts and tidbits:

Pistachios are one of the oldest flowering nut trees, and are one of the only two nuts mentioned in the bible. Pistachios are native to western Asia and Asia Minor, and drew wild in high desert regions.Pistachios ripen in the late summer or early fall. The trees are wind pollinated which means one male tree can pollinate 25 nut bearing female trees. Pistachio trees can bear fruit for up to 200 years. In Iran, pistachios are known as the smiling nut. In China, they are called the happy nut. Pistachios ripen inside of a hull skin and the nut outgrows the shell, forcing the split "smiling" nut.

Pistachios are heart healthy thanks to phytosterols. They also contain a good type of unsaturated fat and antioxidants which aid the heart and body. They are also among the highest fiber nuts, providing 12 percent of the daily value per 30 gram serving.
